Cranberry Ice

Ingredients

4 c. cranberries

2 c. water

3 c. sugar

3 c. water

1 T. lemon juice

Description

My mother always served this along with the turkey at Thanksgiving and Christmas in her best crystal dessert goblets. When the family got larger, she froze it in small plastic cups.. It’s a “must” for our family holiday dinners. I use small plastic cups and freeze ahead. Nelson’s family also like it so I make it for Galle dinners too. The little ones eat seconds and thirds---their favorite holiday dish.

Directions

Cook until berries in 2 c water until they pop; run through sieve or process until smooth in food processor.

Beat mixture while adding sugar, 3 cups water & 1T lemon juice.

Beat well; pour in flat pans or trays and put in freezer.
When partly frozen, remove and beat again.
Freeze again.
Beating it one more time makes it have even better texture.
